Made with only four natural ingredients, they’re sugar-free, full of flavor, and incredibly satisfying. Their chewy, nutty texture and rich dark chocolate coating make them an ideal guilt-free dessert or energy-boosting snack – no oven needed!
Ingredients:
- 310 g dried prunes (2 cups)
- 310 g peanuts (2 cups)
- 210 g sugar-free dark chocolate (1¼ cups chopped or chips)
- 1½ tbsp oil (olive or coconut)
How to Make No-Bake Chocolate Peanut Prune Rollers
- Place dried prunes in water for 5 minutes. Drain, then chop them into small pieces.
- Blend the chopped prunes and peanuts together until a sticky mixture forms.
- Take about 1 tablespoon of mixture and roll it between your palms into a small log shape (roller-style).
- Gently melt the sugar-free dark chocolate in a microwave or double boiler. Stir in the oil until smooth.
- Dip each roller into the melted chocolate and place it on a tray lined with parchment paper. Freeze for 5 minutes.
- Chop 50 g of peanuts finely. Re-dip both ends of each roller in the chocolate, then coat the ends with chopped peanuts.
- Use leftover melted chocolate in a piping bag to drizzle lines across the top of each roller. Chill again for a few minutes before serving.
